Why You Should Try This 3 Packet Roast Recipe
When I’m looking to put a delicious dinner on the table the whole family will enjoy, I typically go for a recipe that takes minimal ingredients for quick prep time and a moderate cooking time (so I can get other stuff done). That’s what is so awesome about this roast recipe.
The primary ingredient in this meal is a nice-sized chuck roast, and the myriad of flavors comes from the combination of the three packets used. Zesty Italian combined with brown gravy and ranch yields a flavor that will have everyone wanting seconds. Adding carrots and onions is classic to almost every roast recipe, so we can’t leave those out. We love a good pot roast, and if we aren’t making this, we make Hot Roast Beef Sandwiches.
Recipe Ingredients
- Chuck Roast: I recommend going for a fairly large chuck with lots of good marbling (better for flavor). We also use a chuck roast in our slow cooker french onion pot roast.
- Veggies: Baby carrots and white onion add heartiness and extra flavor to the roast.
- Seasoning Packets: Zesty Italian dressing mix, brown gravy mix, and ranch dressing mix easily add all the flavors this roast needs.
- Water: For cooking and blending of seasoning packets. You can also use beef broth. (See the full recipe in the recipe card below the the photos).
Variations
- Taco Seasoning – Swap out one of the packets for taco seasoning in this three envelope pot roast for a Mexican twist, and add a few jalapenos for heat.
- Lipton Onion – Swap out one of the packets with an onion soup mix! So much onion flavor.
- Less Sodium -To reduce sodium, leave out one of the packets and use more seasonings, such as onion powder, garlic powder, and Italian Seasoning.
- Veggie Packed – You can add vegetables to this dish, such as potatoes, green beans, and mushrooms!
Step-by-Step Directions
Step One – Add the chuck roast to the crock pot.
Step Two – Sprinkle over the three packets.
Step Three – Add the diced onion and baby carrots over the roast.
Step Four – Pour over the one cup of water. Cover and cook on LOW for 9 hours or on HIGH for about 6 hours (or until the roast is VERY TENDER).
Step Five – When the cooking time is up, shred the meat with two forks, remove any fatty pieces. Serve and enjoy!
How to Serve
- One of the simplest ways to serve this roast is over a bed of mashed potatoes.

How do I store leftovers?
Put any remaining roast in an airtight container and keep in the fridge for up to 4 days. Reheat on the stovetop over medium heat until warmed throughout.
Does this freeze well?
Yes. Be sure to use a freezer safe bag or container. It will keep up to 3 months. Defrost before reheating.
Can I use a different cut of beef?
Yes, any beef roast works well in this three envelope roast recipe.

Ingredients
- 4 lb. chuck roast, (around 3-5 lbs. will work well)
- .6 oz. packet Zesty Italian Dressing Mix, (Good Seasons Brand)
- 1 oz. packet Ranch Dressing Mix
- .87 oz. packet brown gravy mix
- 1 white onion, diced large
- 1 lb. baby carrots
- 1 cup water
Serving suggestion:
- mashed potatoes
Instructions
Add the chuck roast to the slow cooker.
Sprinkle over the three packets.
Add the diced onion and baby carrots over the roast.
Pour over the one cup of water.
Place the lid on the slow cooker and cook on LOW for 9 hours or on HIGH for about 6 hours (or until the roast is VERY TENDER).
When the cooking time is up, shred the meat with two forks, remove any fatty pieces.
If desired degrease the sauce by laying paper towels over the grease and removing.
Serve with mashed potatoes and enjoy.
